This Homemade Chicken Noodle Casserole is a comforting, creamy dish packed with tender chicken, hearty egg noodles, and colorful mixed vegetables. Perfect for a family dinner, it’s easy to make and full of flavor, with a melty cheese topping that everyone will love!

  • 12 ounces wide egg noodles, cooked al dente
  • 3 cups cooked chicken, shredded
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded Colby Jack cheese
  • Chopped fresh parsley for garnish (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat the butter and olive oil over medium heat. Add the diced onion and garlic, cooking until softened, about 4 minutes.
  • Stir in the flour and cook for 1-2 minutes to form a roux.
  • Gradually whisk in the chicken broth and milk, stirring constantly to avoid lumps. Cook for about 5 minutes, until the sauce thickens.
  • Stir in the lemon juice, Italian seasoning, salt, and black pepper.
  • Add the cooked chicken, mixed vegetables, and cooked noodles to the skillet. Mix everything together until evenly combined.
  • Pour the casserole mixture into a greased 9×13-inch baking dish.
  • Sprinkle the shredded Colby Jack cheese evenly over the top of the casserole.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  • Garnish with fresh parsley, if desired, and serve warm.

Notes

  • You can substitute the mixed vegetables with your favorite frozen veggies or use fresh vegetables.
  • To make the casserole ahead of time, you can assemble it and refrigerate it before baking. Just add 5-10 extra minutes to the baking time if baking from cold.
