Indulge in these delightful Homemade Churro Cheesecake Cookies, which blend the flavors of classic churros and creamy cheesecake. Soft, cinnamon-sugar-coated cookies with a rich cheesecake filling make for an irresistible treat!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 tbsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (for cheesecake filling)
  • 1/4 cup cinnamon sugar (for rolling)

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and 1 tbsp of vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and cinnamon. Gradually add this mixture to the wet ingredients and mix until just combined.
  • In another bowl, prepare the cheesecake filling by mixing the softened cream cheese, powdered sugar, and 1/2 tsp vanilla extract until smooth.
  • Scoop the cookie dough into small balls, about 1 tablespoon each, and flatten them slightly. Place 1 teaspoon of the cheesecake mixture in the center, fold the dough around the filling, and roll it back into a ball.
  • Roll each cookie ball in the cinnamon sugar mixture, coating them evenly.
  • Place the cookies on the prepared baking sheet and bake for 12-14 minutes, or until lightly golden. Allow to cool before serving.

Notes

  • For extra flavor, you can add a pinch of nutmeg to the cinnamon sugar mixture.
  • Store cookies in an airtight container to keep them fresh.
