- 1 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 1 large egg
- 1 tbsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract (for cheesecake filling)
- 1/4 cup cinnamon sugar (for rolling)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and 1 tbsp of vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and cinnamon. Gradually add this mixture to the wet ingredients and mix until just combined.
- In another bowl, prepare the cheesecake filling by mixing the softened cream cheese, powdered sugar, and 1/2 tsp vanilla extract until smooth.
- Scoop the cookie dough into small balls, about 1 tablespoon each, and flatten them slightly. Place 1 teaspoon of the cheesecake mixture in the center, fold the dough around the filling, and roll it back into a ball.
- Roll each cookie ball in the cinnamon sugar mixture, coating them evenly.
- Place the cookies on the prepared baking sheet and bake for 12-14 minutes, or until lightly golden. Allow to cool before serving.
Notes
- For extra flavor, you can add a pinch of nutmeg to the cinnamon sugar mixture.
