Ingredients

Scale

Chicken and Coating

  • 4 chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried herbs (thyme or oregano)
  • Vegetable or canola oil, for frying (about 4 cups)

Mashed Potatoes

  • 4 large potatoes, peeled and chopped
  • 3 tbsp butter
  • 1/4 to 1/2 cup warm milk
  • Salt and pepper, to taste

Vegetables

  • 1 cup frozen or fresh corn
  • 1 tbsp butter
  • Salt, to taste

Gravy

  • 2 cups chicken gravy (homemade or store-bought)

Instructions

  1. Prepare the Chicken: Marinate the chicken pieces in buttermilk for at least 30 minutes to tenderize and add tang. In the meantime, mix flour with salt, pepper, paprika, garlic powder, onion powder, and dried herbs to make the seasoning blend.
  2. Coat and Fry the Chicken: Remove chicken from marinade and dredge in the seasoned flour, pressing to create a thick crust. Heat oil to 350°F and fry chicken in batches 8-10 minutes until golden and cooked through. Drain on paper towels.
  3. Make the Mashed Potatoes: Boil peeled potatoes until tender, drain, then mash with butter and warm milk until creamy. Season with salt and pepper to taste, then set aside.
  4. Cook the Corn: Steam or microwave corn, then season with butter and a pinch of salt for a sweet, buttery flavor.
  5. Prepare the Gravy: Warm chicken gravy gently on the stovetop until smooth and pourable.
  6. Assemble Your Bowls: Layer mashed potatoes at the bottom of each bowl, add corn, place crispy chicken on top, and drizzle with warm gravy. Garnish as desired and serve.

Notes

  • Use fresh oil for frying to ensure crispy, clean-tasting chicken.
  • Fry chicken in batches to maintain oil temperature and even cooking.
  • Keep fried chicken warm on a wire rack in a low oven to retain crispiness before serving.
  • Warm milk before adding to mashed potatoes for extra creamy texture.
  • Season each layer lightly with salt for balanced flavor in every bite.
