Ingredients

Scale

Chicken and Breading

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional for spicy kick)
  • 1 cup milk or buttermilk (for dipping)
  • Vegetable oil, for frying (enough for about 2 inches in pan)

Mashed Potatoes

  • 2 large potatoes, peeled and cubed
  • 3 tbsp butter
  • 1/2 cup warm milk
  • Salt and pepper, to taste

Gravy

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth (or vegetable broth as substitute)
  • Salt and pepper, to taste

Optional Vegetables and Toppings

  • Steamed corn or green beans
  • Shredded cheddar cheese
  • Chopped green onions
  • Crispy bacon bits
  • Fresh parsley or chopped green onions for garnish

Instructions

  1. Prepare the Chicken: Cut chicken into bite-sized pieces. In a bowl, mix flour with paprika, garlic powder, onion powder, salt, pepper, and optional cayenne. Dip chicken pieces into milk or buttermilk, then dredge thoroughly in the seasoned flour. Set aside while heating oil.
  2. Fry the Chicken: Heat vegetable oil to 350°F in a deep pan or skillet. Fry chicken in batches until golden brown and cooked through, about 4-5 minutes per batch. Drain on paper towels to remove excess oil.
  3. Make the Mashed Potatoes: Boil peeled potatoes until tender, about 15 minutes. Drain and mash with butter, warm milk, salt, and pepper until creamy and smooth. Keep warm.
  4. Prepare the Gravy: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute to form a roux. Gradually whisk in chicken broth, stirring constantly until gravy thickens. Season with salt and pepper.
  5. Assemble the Bowls: Place mashed potatoes at the bottom of each bowl. Top with crispy fried chicken pieces and ladle warm gravy over. Add optional steamed veggies and garnish as desired. Serve immediately for best texture.

Notes

  • Use buttermilk for breading to tenderize chicken and help flour stick better.
  • Maintain frying oil temperature at 350°F to get crispy, golden chicken without greasiness.
  • Add warm milk to potatoes to avoid lumps and make silky mashed potatoes.
  • Whisk gravy constantly to prevent lumps and achieve smooth consistency.
  • Serve immediately to keep chicken extra crispy.
