Description

Soft, chewy, and irresistibly delicious, these homemade oatmeal cream pies are the perfect treat for lunchboxes or a sweet afternoon snack!

For the Oatmeal Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1/2 cup raisins (optional)

For the Cream Filling:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add to the butter mixture, mixing until combined. Stir in the oats and raisins if using.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a spoon.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • For the cream filling, beat the softened butter in a bowl until smooth. Gradually add the powdered sugar, mixing until combined. Add the heavy cream and vanilla extract, and beat until light and fluffy.
  • Once the cookies are completely cooled, spread a generous amount of cream filling on the flat side of one cookie and top with another cookie to make a sandwich.
  • Store the cream pies in an airtight container at room temperature for up to 5 days, or refrigerate for longer storage.

Notes

For added flavor, mix in chocolate chips or chopped nuts into the cookie dough. These oatmeal cream pies are a perfect treat for lunchboxes or a sweet afternoon snack!
