For the Oatmeal Cookies:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 1/2 cup raisins (optional)
For the Cream Filling:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add to the butter mixture, mixing until combined. Stir in the oats and raisins if using.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the cream filling, beat the softened butter in a bowl until smooth. Gradually add the powdered sugar, mixing until combined. Add the heavy cream and vanilla extract, and beat until light and fluffy.
- Once the cookies are completely cooled, spread a generous amount of cream filling on the flat side of one cookie and top with another cookie to make a sandwich.
- Store the cream pies in an airtight container at room temperature for up to 5 days, or refrigerate for longer storage.
Notes
