Description

Ingredients

  • 2 1/2 cups powdered sugar
  • 1 1/2 tbsp light corn syrup
  • 1 1/2 tbsp water
  • 1/2 tsp peppermint extract
  • 2 tbsp vegetable shortening
  • 12 oz semisweet chocolate chips

Instructions

  • In a mixing bowl, combine the powdered sugar, corn syrup, water, peppermint extract, and vegetable shortening. Mix until a smooth dough forms.
  • Roll the dough into small balls, then flatten them into discs (about 1/4 inch thick). Place them on a baking sheet lined with parchment paper and freeze for 30 minutes.
  • Meanwhile, melt the semisweet chocolate chips in a double boiler or microwave, stirring occasionally until smooth.
  • Dip each peppermint disc into the melted chocolate, ensuring it is fully coated. Place them back onto the parchment paper to set.
  • Allow the chocolate to harden completely before serving.

Notes

  • If you prefer a darker chocolate coating, you can use dark chocolate chips instead of semisweet.
  • You can store these peppermint patties in an airtight container in the refrigerator for up to 2 weeks.
  • For a festive touch, sprinkle crushed peppermint or colored sugar on top of the patties before the chocolate sets.
