Description

A delicious and hearty casserole that combines all the classic flavors of a Reuben sandwich in an easy-to-make bake!


Ingredients

  • 1 pound deli corned beef, chopped
  • 1 can sauerkraut, drained
  • 2 cups shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 1/4 cup chopped dill pickles
  • 8 slices rye bread, cubed
  • 1/4 cup butter, melted

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a 9×13 inch baking dish, layer the chopped corned beef, drained sauerkraut, shredded Swiss cheese, Thousand Island dressing, chopped dill pickles, and cubed rye bread.
  • Drizzle the melted butter evenly over the top.
  • Cover the dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the casserole is bubbly and golden brown.
  • Allow it to cool slightly before serving.

Notes

Consider adding sautéed onions or bell peppers for extra flavor and texture.
