Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1/4 cup honey
  • 1/2 cup chopped walnuts
  • 1/2 tsp cinnamon
  • 1/4 cup honey for drizzling

Instructions

  • Preheat the oven to 325°F. In a mixing bowl, combine graham cracker crumbs with melted butter and press the mixture into the bottom of a springform pan to form the crust.
  • In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add eggs, one at a time, mixing well after each addition, then blend in the honey.
  • Gently fold in the chopped walnuts and cinnamon until evenly distributed. Pour the cheesecake filling over the crust in the springform pan.
  • Bake for 55 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let cool completely.
  • Drizzle the cooled cheesecake with additional honey before serving.

Notes

  • For added texture, consider topping with more chopped walnuts or a sprinkle of cinnamon before serving.
  • This cheesecake can be made a day in advance and stored in the refrigerator.
