Description

Sweet, buttery, and irresistibly creamy, this Honey Butter Skillet Corn is a simple yet flavorful side dish made with corn, cream cheese, honey, and fresh herbs. Ready in just minutes, it pairs perfectly with grilled meats, holiday meals, or weeknight dinners.

Ingredients

Scale
  • 2 tablespoons salted butter

  • 2 (10-ounce) packages frozen corn, thawed, or 4 1/2 cups fresh corn kernels (from about 5 ears)

  • 2 ounces cream cheese (about 1/4 cup), cut into pieces

  • 2 tablespoons honey

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons thinly sliced fresh chives or scallions, plus more for garnish

Instructions

  • Melt the butter in a large skillet over medium heat.

  • Add the corn and cook, stirring occasionally, for 4–5 minutes until heated through and lightly golden.

  • Stir in the cream cheese and honey. Continue cooking, stirring frequently, until the cream cheese has melted and the mixture is smooth and creamy, about 2–3 minutes.

  • Season with salt and black pepper.

  • Stir in chives or scallions.

  • Garnish with additional herbs before serving, if desired.

Notes

  • Fresh or frozen corn both work well—use whatever you have on hand.

  • For extra flavor, add a pinch of smoked paprika or cayenne pepper.

  • This dish can be made ahead and reheated gently before serving.
