Ingredients
Scale
- 1 1/2 lbs whole carrots (peeled and trimmed)
- 3 tbsp unsalted butter (melted)
- 2 tbsp honey
- 2 cloves garlic (minced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme (or fresh thyme for garnish)
- 1/2 tsp paprika (optional, for extra warmth)
Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Carrots:
- Peel and trim the carrots, cutting them into evenly sized pieces (about 2-3 inches long) to ensure they cook evenly.
- Make the Honey Garlic Butter Sauce:
- In a small bowl, whisk together the melted butter, honey, minced garlic, salt, black pepper, and paprika (if using).
- Toss the Carrots:
- Place the carrots in a large bowl or on a baking sheet. Pour the honey garlic butter mixture over the carrots and toss to coat evenly.
- Roast the Carrots:
- Arrange the carrots in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even roasting.
- Garnish and Serve:
- Once roasted, remove the carrots from the oven and sprinkle with dried or fresh thyme. Serve immediately as a side dish.
Notes
- For a more intense flavor, you can drizzle some additional honey over the carrots just before serving.
- If you prefer a spicier kick, try adding a pinch of cayenne pepper or red pepper flakes.
- Fresh thyme can be used as a garnish instead of dried thyme for a fresh burst of flavor.
