  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  • Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  • Prepare the potatoes: Place the halved baby potatoes in a large bowl. Drizzle with olive oil and melted butter. Toss to coat the potatoes evenly.
  • Make the honey mustard sauce: In a separate small bowl, whisk together the honey, Dijon mustard, whole grain mustard (if using), minced garlic, salt, black pepper, and smoked paprika (if using).
  • Coat the potatoes: Pour the honey mustard sauce over the potatoes and toss to coat them well. Make sure the potatoes are evenly coated with the sauce.
  • Roast the potatoes: Transfer the coated potatoes to the prepared baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender when pierced with a fork, tossing halfway through the cooking time.
