For the Cupcakes:

- 1/4 cup sour cream
- 1/4 cup peach preserves
For the Cream Cheese Filling:
- 4 oz cream cheese, softened
- 1/4 cup honey
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Mix in the sour cream and peach preserves until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In another bowl, beat together the cream cheese and honey until smooth and creamy.
- Fill each cupcake liner with a spoonful of batter, then add a dollop of the cream cheese mixture in the center.
- Top with another spoonful of batter to cover the cream cheese filling.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
- If you prefer a stronger peach flavor, you can add extra peach preserves to the batter.
