  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup peach preserves

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup honey

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Mix in the sour cream and peach preserves until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • In another bowl, beat together the cream cheese and honey until smooth and creamy.
  • Fill each cupcake liner with a spoonful of batter, then add a dollop of the cream cheese mixture in the center.
  • Top with another spoonful of batter to cover the cream cheese filling.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

  • If you prefer a stronger peach flavor, you can add extra peach preserves to the batter.
