For the Dip:

  • 1 lb spicy sausage (Italian or breakfast sausage)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil (optional)
  • 1 cup beer (lager or ale)
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground mustard (optional)
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish

Instructions

  • Cook the sausage:
    • In a large skillet, cook the sausage over medium heat until browned and fully cooked. Remove excess grease if necessary.
    • Add minced garlic and cook for 1 minute.
  • Add beer:
    • Pour in the beer and stir, scraping up any browned bits from the skillet. Simmer for 2-3 minutes to reduce slightly.
  • Melt the cheese:
    • Lower the heat to medium-low. Add cream cheese, stirring until melted and smooth.
    • Gradually add cheddar and Monterey Jack cheese, stirring constantly until fully melted.
  • Season the dip:
    • Stir in smoked paprika, ground mustard, salt, and pepper. Adjust seasoning to taste.
  • Serve:
    • Transfer to a serving dish or keep warm in a slow cooker. Garnish with green onions or parsley.
    • Serve with pretzels, tortilla chips, crusty bread, or veggies for dipping.

Notes

For extra flavor, feel free to add a few dashes of hot sauce or cayenne pepper. You can also substitute the sausage with a milder variety for less heat.
