- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup crushed pineapple, drained
- 1/4 cup pineapple juice
- 1 cup whipped cream
- 3 large eggs
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs and melted butter, then press into the bottom of a springform pan to create the crust.
- In a separate bowl, beat the cream cheese, sugar, crushed pineapple, and pineapple juice until smooth. Add the eggs one at a time, mixing well after each addition.
- Pour the cheesecake mixture over the prepared crust and bake in the preheated oven for 50-60 minutes, or until set.
- Once cooled, top with whipped cream and refrigerate for at least 4 hours before serving.
Notes
For extra tropical flair, garnish with additional crushed pineapple or toasted coconut.
