Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup mashed bananas (about 12 medium bananas)
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 cup white chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, whisk together the mashed bananas, vegetable oil, and egg until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the white chocolate chips.
  • Spoon the batter into the prepared muffin tin, filling each liner about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Notes

For extra flavor, you can add chopped nuts or substitute half the white chocolate chips with semi-sweet chocolate chips.
