These moist and flavorful muffins combine the sweetness of ripe bananas with creamy white chocolate and a hint of cinnamon. Perfect for breakfast or a snack!

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup mashed bananas (about 1–2 medium bananas)
- 1/4 cup vegetable oil
- 1 egg
- 1/2 cup white chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the mashed bananas, vegetable oil, and egg until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the white chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each liner about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Notes
For extra flavor, you can add chopped nuts or substitute half the white chocolate chips with semi-sweet chocolate chips.
