- 12 lasagna noodles
- 1 lb Italian meatballs (homemade or store-bought)
- 2 cups ricotta cheese
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 1 egg
- 1 jar (24 oz) marinara sauce
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Cook lasagna noodles according to package directions. Drain and set aside.
- In a bowl, mix ricotta, mozzarella, Parmesan, egg, parsley, salt, and pepper.
- Lay each lasagna noodle flat and spread an even layer of the ricotta mixture on top. Roll up the noodles and place them seam-side down in a baking dish.
- Pour marinara sauce over the roll-ups and arrange the meatballs on top.
- Cover with foil and bake for 30 minutes. Remove foil, and bake for an additional 10 minutes, until bubbly and golden.
- Garnish with fresh parsley and serve hot.
Notes
For a bit of extra flavor, add Italian seasoning to the ricotta mixture.
