This vibrant and refreshing Italian pasta salad is the perfect side dish for any occasion. Packed with colorful veggies, mozzarella, olives, and a tangy Italian dressing, it’s a simple and flavorful dish that will complement any meal.


Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 cup Italian dressing
  • 12 oz tri-color rotini pasta
  • 8 oz mozzarella cheese, diced into cubes
  • 6 oz can of sliced black olives, drained
  • 1 green bell pepper, diced
  • 1 small red onion, chopped
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Instructions

  • Cook the tri-color rotini pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, mozzarella cubes, black olives, green bell pepper, red onion, and parsley.
  • In a small bowl, whisk together the Italian dressing, Italian seasoning, salt, and pepper.
  • Pour the dressing mixture over the pasta salad and toss to coat evenly.
  • Chill the pasta salad in the refrigerator for at least 30 minutes before serving to let the flavors marinate.
  • Garnish with additional fresh parsley or more Italian seasoning if desired before serving.
