A hearty and delicious dish featuring flavorful Italian sausage with sweet bell peppers and onions, perfectly roasted in the oven. Ideal for a satisfying weeknight meal!


Ingredients

  • 1 lb Italian sausage (mild or hot, your choice)
  • 2 tablespoons olive oil
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C).
  • Cook Sausage: Heat olive oil in a large oven-safe skillet over medium heat. Add the Italian sausages and cook until browned on all sides, about 8-10 minutes. Remove sausages from the skillet and set aside.
  • Sauté Vegetables: In the same skillet, add sliced bell peppers and onions. Cook, stirring occasionally, until the vegetables are softened and slightly caramelized, about 8-10 minutes.
  • Add Garlic and Seasonings: Stir in the minced garlic, dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.
  • Combine and Bake: Return the sausages to the skillet, placing them on top of the peppers and onions. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the sausages are cooked through (internal temperature of 160°F (71°C)).
  • Serve: Garnish with chopped fresh parsley before serving. Enjoy with crusty bread or over pasta!

Notes

For extra flavor, deglaze the skillet with a splash of white wine before baking.
