- 4 orange bell peppers
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 can diced tomatoes
- 1 cup cooked rice
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Shredded cheese for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Carefully carve faces into the peppers to resemble jack-o-lanterns.
- In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
- Stir in the diced tomatoes, cooked rice, chili powder, garlic powder, salt, and pepper. Mix well to combine.
- Spoon the beef and rice mixture into the hollowed-out bell peppers, packing it in tightly.
- Place the stuffed peppers in a baking dish and cover them with aluminum foil.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Remove the foil and sprinkle shredded cheese on top of each pepper. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
