These festive Jack-o-Lantern Stuffed Peppers are a fun and delicious way to celebrate Halloween! Orange bell peppers are hollowed out and filled with a flavorful ground beef and rice mixture, topped with melted cheese. Not only are they tasty, but they’re also a great way to get into the spooky spirit!


Ingredients

  • 4 orange bell peppers
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 can diced tomatoes
  • 1 cup cooked rice
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Shredded cheese for topping

Instructions

  • Preheat the oven to 350°F (175°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Carefully carve faces into the peppers to resemble jack-o-lanterns.
  • In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
  • Stir in the diced tomatoes, cooked rice, chili powder, garlic powder, salt, and pepper. Mix well to combine.
  • Spoon the beef and rice mixture into the hollowed-out bell peppers, packing it in tightly.
  • Place the stuffed peppers in a baking dish and cover them with aluminum foil.
  • Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  • Remove the foil and sprinkle shredded cheese on top of each pepper. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
