Description

This Keto Beef Cabbage Roll Casserole is a low-carb, savory dish that combines ground beef, cabbage, and flavorful seasonings, topped with melted cheese. It’s a satisfying and hearty casserole that brings the flavors of traditional cabbage rolls without the carbs.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small head cabbage, chopped
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste
  • Shredded cheese for topping (Cheddar or mozzarella works well)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, brown the ground beef over medium heat with the chopped onion and minced garlic. Cook until the beef is fully browned and the onion is softened.
  • Add the chopped cabbage, diced tomatoes, beef broth, paprika, salt, and pepper to the skillet. Stir everything together and bring to a simmer. Let the mixture cook for 5-7 minutes to allow the flavors to meld.
  • Transfer the mixture to a casserole dish and top with a generous layer of shredded cheese.
  • Cover with foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes until the cheese is melted and bubbly.
  • Serve hot and enjoy your delicious keto casserole!

Notes

  • For added flavor, you can use different types of cheese such as Monterey Jack or a blend of cheeses.
  • If you prefer a bit of heat, you can add some red pepper flakes or hot sauce to the casserole mixture.
  • This dish stores well in the fridge and can be enjoyed as leftovers.
