These Keto Beef Stroganoff Meatballs are a low-carb twist on the classic stroganoff. Ground beef meatballs are cooked to perfection in a creamy, flavorful sauce made with sour cream, beef broth, and Dijon mustard, making for a rich and satisfying meal. Perfect for a keto-friendly dinner!


Ingredients

  • 1 lb ground beef
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sour cream
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • Chopped parsley for garnish

Instructions

  • In a bowl, combine ground beef, almond flour, parmesan cheese, 1/4 cup sour cream, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Shape the mixture into meatballs, about 1-2 inches in diameter.
  • In a skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
  • Remove the meatballs from the skillet and set aside.
  • In the same skillet, add beef broth, 1/2 cup sour cream, Dijon mustard, and Worcestershire sauce. Stir until well combined and the sauce begins to thicken.
  • Return the meatballs to the skillet and simmer in the sauce for 10-15 minutes until fully cooked through and tender.
  • Serve the meatballs topped with the creamy sauce and garnish with chopped parsley.

Notes

  • For added flavor, you can sauté onions and garlic in the skillet before adding the beef broth.
  • You can substitute the beef broth for chicken or vegetable broth if desired.
  • To make this recipe even lower carb, serve with zucchini noodles or cauliflower rice.
