- 1 lb ground beef
- 1/2 cup almond flour
- 1/4 cup grated parmesan cheese
- 1/4 cup sour cream
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
- 1/2 cup beef broth
- 1/2 cup sour cream
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- Chopped parsley for garnish
Instructions
- In a bowl, combine ground beef, almond flour, parmesan cheese, 1/4 cup sour cream, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about 1-2 inches in diameter.
- In a skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
- Remove the meatballs from the skillet and set aside.
- In the same skillet, add beef broth, 1/2 cup sour cream, Dijon mustard, and Worcestershire sauce. Stir until well combined and the sauce begins to thicken.
- Return the meatballs to the skillet and simmer in the sauce for 10-15 minutes until fully cooked through and tender.
- Serve the meatballs topped with the creamy sauce and garnish with chopped parsley.
Notes
- For added flavor, you can sauté onions and garlic in the skillet before adding the beef broth.
- You can substitute the beef broth for chicken or vegetable broth if desired.
- To make this recipe even lower carb, serve with zucchini noodles or cauliflower rice.
