Ingredients
For the filling:

5 egg yolks

14 ounces sweetened condensed milk (1 can)

1/2 cup freshly squeezed lime juice (from about 1 lb of limes)
For the crust:

1 1/2 cups graham cracker crumbs (from 10 to 12 crackers)

2 tablespoons sugar

6 tablespoons melted butter
For serving:

Whipped cream (homemade or store-bought)

Lime zest (optional)
Instructions

Preheat oven to 350°F (175°C).

In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.

Bake the crust for 8–10 minutes until lightly golden. Let cool slightly.

In a medium bowl, whisk together egg yolks, sweetened condensed milk, and lime juice until fully combined and slightly thickened.

Pour the filling into the cooled crust and spread evenly.

Bake for 15–17 minutes until the filling is just set but still slightly jiggly in the center.
