For the filling:

  • 5 egg yolks

  • 14 ounces sweetened condensed milk (1 can)

  • 1/2 cup freshly squeezed lime juice (from about 1 lb of limes)

For the crust:

  • 1 1/2 cups graham cracker crumbs (from 10 to 12 crackers)

  • 2 tablespoons sugar

  • 6 tablespoons melted butter

For serving:

  • Whipped cream (homemade or store-bought)

  • Lime zest (optional)


Instructions

  • Preheat oven to 350°F (175°C).

  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.

  • Bake the crust for 8–10 minutes until lightly golden. Let cool slightly.

  • In a medium bowl, whisk together egg yolks, sweetened condensed milk, and lime juice until fully combined and slightly thickened.

  • Pour the filling into the cooled crust and spread evenly.

  • Bake for 15–17 minutes until the filling is just set but still slightly jiggly in the center.

  • Remove from oven and let cool to room temperature.

  • Refrigerate for at least 3 hours or until fully chilled.

  • Top with whipped cream and lime zest before serving.

Notes

  • Use fresh key limes if available for a more authentic flavor. If not, Persian limes work well.

  • For a more stable whipped cream topping, you can add a small amount of powdered sugar when whipping.
