This hearty Kielbasa Potato Soup is a comforting blend of tender potatoes, smoky sausage, and creamy broth, perfect for chilly days.

- For the Soup:
- 1 lb kielbasa sausage, sliced
- 4 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 carrots, peeled and diced
- 2 celery stalks, chopped
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- For Garnish:
- Fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove the sausage and set aside.
- In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables begin to soften, about 5 minutes.
- Add minced garlic and smoked paprika, cooking for an additional 1-2 minutes until fragrant.
- Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.
- Use a potato masher to slightly mash some of the potatoes to thicken the soup.
- Stir in the cooked kielbasa and heavy cream. Simmer for an additional 5 minutes to heat through.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley before serving.
