Description

This hearty Kielbasa Potato Soup is a comforting blend of tender potatoes, smoky sausage, and creamy broth, perfect for chilly days.


Ingredients

  • For the Soup:
    • 1 lb kielbasa sausage, sliced
    • 4 medium potatoes, peeled and diced
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 4 cups chicken broth
    • 1 cup heavy cream
    • 2 tablespoons olive oil
    • 2 carrots, peeled and diced
    • 2 celery stalks, chopped
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste
  • For Garnish:
    • Fresh parsley, chopped

Instructions

  • Heat olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove the sausage and set aside.
  • In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables begin to soften, about 5 minutes.
  • Add minced garlic and smoked paprika, cooking for an additional 1-2 minutes until fragrant.
  • Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.
  • Use a potato masher to slightly mash some of the potatoes to thicken the soup.
  • Stir in the cooked kielbasa and heavy cream. Simmer for an additional 5 minutes to heat through.
  • Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with fresh parsley before serving.

This soup pairs well with crusty bread for dipping!
