Description

These Korean Glazed Chicken Drumsticks are bursting with flavor, featuring a sweet and savory glaze made from soy sauce, rice vinegar, brown sugar, garlic, and ginger. The glaze is thickened with cornstarch and infused with sesame oil, sesame seeds, and a hint of spice from red pepper flakes. A perfect dish for an easy yet flavorful dinner, garnished with fresh green onions for a pop of color and crunch.

Ingredients

Scale
  • 1 tablespoon sesame oil

  • 1 tablespoon cornstarch

  • 1/2 cup soy sauce

  • 1/2 cup rice vinegar

  • 3/4 cup brown sugar

  • 6 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 teaspoon sesame seeds

  • 1/2 teaspoon crushed red pepper flakes

  • 8 chicken drumsticks

  • 2 tablespoons sliced green onions for garnish

  • 1 teaspoon sesame seeds for garnish

Instructions

  • Preheat your oven to 400°F (200°C).

  • In a small bowl, whisk together sesame oil, cornstarch, soy sauce, rice vinegar, brown sugar, minced garlic, ground ginger, sesame seeds, and crushed red pepper flakes. Set aside.

  • Heat a large oven-safe skillet over medium-high heat. Add the chicken drumsticks and sear each side for 3-4 minutes, until golden brown. Remove the chicken and set aside.

  • In the same skillet, pour the prepared glaze mixture. Bring it to a simmer over medium heat, stirring occasionally. Let it simmer for about 5 minutes, until the sauce thickens slightly.

  • Return the chicken drumsticks to the skillet and coat them with the glaze, turning them to ensure even coverage.

  • Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through and the glaze is sticky and caramelized. (You can baste the chicken with the sauce halfway through the cooking time.)

  • Remove from the oven and let it rest for a few minutes.

  • Garnish with sliced green onions and sesame seeds before serving.

Notes

  • For extra crispy skin, you can broil the drumsticks for the last 2-3 minutes of cooking.

  • If you like a spicier dish, increase the amount of crushed red pepper flakes to taste.

  • This recipe can be paired with steamed rice or a vegetable side dish for a complete meal.
