This Lasagna Soup brings all the comforting flavors of lasagna in a cozy, hearty soup form. Packed with savory ground beef, tomatoes, and melty mozzarella cheese, it’s a delicious and quick way to enjoy your favorite pasta dish in a bowl. Perfect for chilly evenings and busy nights!

Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup uncooked pasta
  • 1 cup shredded mozzarella cheese
  • Fresh basil, chopped (for garnish)

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Add in the onion and garlic, cooking until softened.
  • Stir in the Italian seasoning, salt, and pepper. Add the diced tomatoes, tomato sauce, and beef broth. Bring to a simmer.
  • Add the uncooked pasta and cook according to package instructions.
  • Serve the soup hot, topped with shredded mozzarella cheese and fresh basil.

Notes

  • You can substitute ground beef with ground turkey for a leaner version.
  • Add some ricotta or cottage cheese to the soup for an extra creamy texture, reminiscent of lasagna layers.
  • If you prefer a thicker soup, reduce the amount of broth to suit your taste.
