Ingredients
For the crust:

1 cup unsalted butter, softened

½ cup powdered sugar

For the filling:

2 cups sugar

1 teaspoon dried culinary lavender

4 large eggs

6 tablespoons freshly squeezed lemon juice

2 tablespoons freshly grated lemon zest

1 teaspoon vanilla extract

¼ teaspoon lavender extract

Instructions

Preheat Oven: Set your oven to 350°F (175°C).

Prepare the Crust: In a bowl, combine softened butter, flour, powdered sugar, and vanilla extract. Mix until the dough is crumbly. Press the mixture into the bottom of a 9×13-inch baking dish. Bake for 20 minutes, or until slightly set.

Infuse the Sugar: While the crust is baking, combine sugar and dried lavender in a bowl. Let it sit to infuse the sugar with the lavender flavor.

Prepare the Filling: In a separate bowl, whisk together eggs and freshly squeezed lemon juice. Gradually add the infused lavender sugar, flour, lemon zest, vanilla extract, lavender extract, and salt. Mix until well combined.

Assemble and Bake: Pour the lemon filling over the baked crust. Return to the oven and bake for 25–30 minutes, or until the top is slightly cracked and set. The center should still be soft and curd-like.
- Cool and Serve: Allow the bars to cool completely before slicing. Dust with powdered sugar before serving.
