- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley (optional)
- Oil for frying (or cooking spray for baking)
Instructions
- In a large bowl, combine the leftover mashed potatoes, cheddar cheese, Parmesan cheese, flour, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined. The mixture should be thick and slightly sticky.
- Using your hands or a small cookie scoop, form the mixture into 1-inch balls. If desired, mix in the chopped parsley for extra flavor and color.
- For Frying: Heat oil in a large skillet over medium heat. Carefully add the potato balls and cook until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
For Baking: Preheat your oven to 400°F (200°C). Place the balls on a lined baking sheet and lightly spray with cooking spray. Bake for 20-25 minutes, or until golden brown.
