Description

This refreshing Lemon Basil Angel Hair Pasta is tossed with crispy capers and zucchini, creating a light yet flavorful dish perfect for any occasion.


Ingredients

  • 8 oz angel hair pasta
  • 2 tbsp olive oil
  • 1/4 cup capers
  • 1 zucchini, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Grated parmesan cheese, for serving

Instructions

  • Cook the angel hair pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add capers and fry until crispy, about 3-4 minutes. Remove capers from skillet and set aside.
  • In the same skillet, add zucchini and garlic. Cook until zucchini is tender, about 4-5 minutes.
  • Add cooked pasta, basil, lemon zest, lemon juice, salt, and pepper to the skillet. Toss to combine, adding reserved pasta water as needed to create a sauce.
  • Serve the pasta topped with crispy capers and grated parmesan cheese.

Notes

For added protein, consider adding grilled chicken or shrimp.
