These lemon butter scallops are the perfect combination of tender, juicy scallops seared in a rich, buttery lemon sauce, with a hint of garlic and fresh parsley. Quick, easy, and absolutely delicious!
Ingredients

1 tablespoon unsalted butter

1 pound sea scallops

Kosher salt and freshly ground black pepper, to taste
For the Lemon Butter Sauce

2 tablespoons unsalted butter

3 cloves garlic, minced

3 tablespoons freshly squeezed lemon juice

Kosher salt and freshly ground black pepper, to taste

2 tablespoons chopped fresh parsley leaves
Instructions

In a large skillet, melt 1 tablespoon of butter over medium-high heat.

Season the scallops with salt and pepper on both sides.

Once the butter is melted and hot, add the scallops to the pan in a single layer, making sure they don’t touch each other.

Cook the scallops for 2-3 minutes on each side until golden brown and just cooked through. Remove the scallops from the pan and set aside.

In the same skillet, add 2 tablespoons of butter. Once melted, add minced garlic and sauté for 1 minute until fragrant.

Add freshly squeezed lemon juice, season with salt and pepper, and stir to combine.

Return the scallops to the pan and toss gently to coat them in the lemon butter sauce.

Sprinkle chopped fresh parsley on top before serving.
Notes

Be sure not to overcook the scallops, as they can become rubbery. They should be golden on the outside and opaque in the center.
