Description

These lemon butter scallops are the perfect combination of tender, juicy scallops seared in a rich, buttery lemon sauce, with a hint of garlic and fresh parsley. Quick, easy, and absolutely delicious!


Ingredients

Scale
  • 1 tablespoon unsalted butter

  • 1 pound sea scallops

  • Kosher salt and freshly ground black pepper, to taste

For the Lemon Butter Sauce

  • 2 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • 3 tablespoons freshly squeezed lemon juice

  • Kosher salt and freshly ground black pepper, to taste

  • 2 tablespoons chopped fresh parsley leaves


Instructions

  • In a large skillet, melt 1 tablespoon of butter over medium-high heat.

  • Season the scallops with salt and pepper on both sides.

  • Once the butter is melted and hot, add the scallops to the pan in a single layer, making sure they don’t touch each other.

  • Cook the scallops for 2-3 minutes on each side until golden brown and just cooked through. Remove the scallops from the pan and set aside.

  • In the same skillet, add 2 tablespoons of butter. Once melted, add minced garlic and sauté for 1 minute until fragrant.

  • Add freshly squeezed lemon juice, season with salt and pepper, and stir to combine.

  • Return the scallops to the pan and toss gently to coat them in the lemon butter sauce.

 

  • Sprinkle chopped fresh parsley on top before serving.

Notes

  • Be sure not to overcook the scallops, as they can become rubbery. They should be golden on the outside and opaque in the center.

  • You can serve these scallops with rice, pasta, or steamed vegetables for a complete meal.
