  • For the Parmesan Crusted Chicken:

    • 1 1/2 lb chicken breasts (2 large), patted dry with paper towels

    • 1 tbsp olive oil (for sautéing)

  • For the Egg Mixture:

    • 2 large eggs

    • 1 garlic clove, minced

    • 1/2 tsp Italian seasoning

    • 1/2 tsp salt

    • 1/4 tsp ground black pepper

  • For the Parmesan Breading Mixture:

    • 1 cup Parmesan cheese, grated

    • 3 tbsp all-purpose flour

  • For the Lemon Butter Sauce:

    • 8 tbsp unsalted butter

    • 2 garlic cloves, minced

    • 1/4 cup lemon juice

    • 1/4 cup chicken broth

    • 1/4 tsp ground black pepper


Instructions

  • Prepare the Chicken:

    • Pat the chicken breasts dry with paper towels. This will help the coating adhere better.

    • In a shallow bowl, beat the eggs, minced garlic, Italian seasoning, salt, and black pepper together.

    • In a separate shallow dish, mix the grated Parmesan cheese with the all-purpose flour.

  • Bread the Chicken:

    • Dip each chicken breast first into the egg mixture, ensuring it’s fully coated.

    • Then dredge the chicken in the Parmesan flour mixture, pressing down lightly to ensure a thick, even coating.

  • Cook the Chicken:

    • Heat olive oil in a large skillet over medium heat.

    • Once hot, add the breaded chicken breasts and cook for 5-6 minutes per side, until the chicken is golden brown and the internal temperature reaches 165°F (74°C).

    • Remove the chicken from the skillet and set it aside on a plate.

  • Make the Lemon Butter Sauce:

    • In the same skillet, melt the butter over medium heat.

    • Add the minced garlic and cook for 1-2 minutes, stirring occasionally, until fragrant.

    • Add the lemon juice, chicken broth, and black pepper. Stir to combine and let the sauce simmer for 3-4 minutes to reduce slightly.

 

  • Combine and Serve:

    • Return the chicken breasts to the skillet, spooning the sauce over the chicken.

    • Let the chicken simmer in the sauce for an additional 2-3 minutes to soak up the flavors.

    • Garnish with chopped parsley and lemon slices, if desired.

Notes

  • For extra crispy chicken, try pan-frying the chicken for a few more minutes until golden brown, then finishing it off in the oven at 375°F (190°C) for 10 minutes.
