Ingredients

  • 1/2 teaspoon salt

For the Lemon Glaze (optional):

  • 1 cup powdered sugar
  • 23 tablespoons lemon juice
  • 1 teaspoon lemon zest

Instructions

  • Cream the Butter and Sugar:
    • In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  • Add Egg and Lemon:
    • Beat in the egg, lemon zest, and lemon juice until well combined.
  • Combine Dry Ingredients:
    • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Chill the Dough:
    • Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  • Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Shape and Bake:
    • Roll the chilled dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the bottom of a glass or your hand. Bake for 10-12 minutes, or until the edges are lightly golden.
  • Prepare the Lemon Glaze (Optional):
    • While the cookies are baking, mix the powdered sugar with lemon juice and zest until smooth. Drizzle over the cooled cookies if desired.
  • Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
