Description

This bright and tangy Lemon Vinaigrette is a refreshing addition to salads, roasted vegetables, or grilled meats. With its simple ingredients, it’s easy to whip up and a healthier alternative to store-bought dressings. Customize it to your taste by adding optional ingredients like honey, mustard, or garlic.

Ingredients

Scale
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • 1 small garlic clove, minced (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  • In a small bowl or jar, combine the lemon juice, Dijon mustard (if using), honey or maple syrup (if using), and minced garlic (if using).
  • Whisk the ingredients together until fully combined.
  • Slowly drizzle in the olive oil while whisking continuously to emulsify the vinaigrette.
  • Season with salt and freshly ground black pepper to taste.
  • Taste and adjust the flavors as needed (add more honey for sweetness or more lemon for acidity).
  • Drizzle over salads, roasted vegetables, or use as a marinade.

Notes

  • Store the vinaigrette in an airtight container in the refrigerator for up to 1 week. Shake or whisk again before using as the ingredients may separate.
  • For a creamier version, add a tablespoon of Greek yogurt or sour cream.
  • You can also use this vinaigrette as a marinade for chicken, fish, or tofu.
