Instructions
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan to form the crust.
- In a separate bowl, beat cream cheese and 1/2 cup sugar until smooth. Add lime juice and lime zest and mix well.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Pour the lime mousse mixture over the prepared crust in the springform pan. Smooth the top.
- Chill the cheesecake in the refrigerator for at least 4 hours, or until set.
