  • 4 large russet potatoes
  • 1 lb ribeye or sirloin steak (cut into bite-sized cubes)
  • 2 tbsp olive oil (for cooking the steak)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits (or crumbled bacon)
  • 1/2 cup sour cream
  • 2 tbsp green onions or chives (chopped)

Instructions

  • Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean, then poke a few holes in each potato with a fork. Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  • Cook the Steak Bites: While the potatoes are baking, heat the olive oil in a skillet over medium-high heat. Season the steak cubes with garlic powder, onion powder, salt, and pepper. Add the steak bites to the skillet and cook for 4-5 minutes, turning occasionally, until they’re browned and cooked to your desired level of doneness. Remove from heat and set aside.
  • Prepare the Toppings: While the steak cooks, prepare the rest of your toppings. Shred the cheddar cheese, cook and crumble the bacon, and chop the green onions or chives.
  • Assemble the Loaded Potatoes: Once the potatoes are done, cut a slit down the center of each potato and gently fluff the insides with a fork. Top each potato with a spoonful of sour cream, a sprinkle of shredded cheddar cheese, some steak bites, crumbled bacon, and a garnish of green onions or chives.
