Description

This loaded cauliflower casserole is a creamy and savory side dish with all the flavors of a loaded potato casserole. It’s made with a rich combination of cauliflower, sharp cheddar cheese, sour cream, cream cheese, crispy bacon, and fresh green onions. A perfect comfort food that’s low-carb and full of flavor!


Ingredients

  • 1 large head of cauliflower, cleaned and trimmed
  • 1 cup chicken stock (for steaming the cauliflower)
  • 2 cloves garlic, minced
  • ½ cup sour cream
  • 4 oz cream cheese, softened
  • 2 cups sharp cheddar cheese, shredded
  • 4 slices bacon, cooked crisp and crumbled
  • 2 green onions, thinly sliced (for garnish)
  • Sea salt and black pepper, to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the cauliflower into small florets. In a large pot, steam the cauliflower with the chicken stock and minced garlic until the cauliflower is tender (about 10-15 minutes).
  • Drain the cauliflower and place it in a large bowl. Mash the cauliflower with a potato masher or fork until smooth.
  • Add the sour cream, cream cheese, and half of the shredded cheddar cheese to the mashed cauliflower. Mix well until everything is combined and creamy.
  • Season the mixture with salt and pepper to taste.
  • Transfer the cauliflower mixture into a greased 9×13-inch baking dish. Top with the remaining shredded cheddar cheese and crumbled bacon.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with sliced green onions before serving. Enjoy your loaded cauliflower casserole!

Notes

  • For extra flavor, you can add some garlic powder or onion powder to the mashed cauliflower mixture.
  • This casserole can be made ahead of time. Assemble it and refrigerate it before baking for up to 24 hours.
  • For a lighter version, you can substitute the sour cream and cream cheese with Greek yogurt or a dairy-free alternative.
  • Add some extra crispy bacon for a stronger crunch, or sprinkle some more shredded cheese on top before baking.
