Description
This loaded cauliflower casserole is a creamy and savory side dish with all the flavors of a loaded potato casserole. It’s made with a rich combination of cauliflower, sharp cheddar cheese, sour cream, cream cheese, crispy bacon, and fresh green onions. A perfect comfort food that’s low-carb and full of flavor!

- 1 large head of cauliflower, cleaned and trimmed
- 1 cup chicken stock (for steaming the cauliflower)
- 2 cloves garlic, minced
- ½ cup sour cream
- 4 oz cream cheese, softened
- 2 cups sharp cheddar cheese, shredded
- 4 slices bacon, cooked crisp and crumbled
- 2 green onions, thinly sliced (for garnish)
- Sea salt and black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the cauliflower into small florets. In a large pot, steam the cauliflower with the chicken stock and minced garlic until the cauliflower is tender (about 10-15 minutes).
- Drain the cauliflower and place it in a large bowl. Mash the cauliflower with a potato masher or fork until smooth.
- Add the sour cream, cream cheese, and half of the shredded cheddar cheese to the mashed cauliflower. Mix well until everything is combined and creamy.
- Season the mixture with salt and pepper to taste.
- Transfer the cauliflower mixture into a greased 9×13-inch baking dish. Top with the remaining shredded cheddar cheese and crumbled bacon.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with sliced green onions before serving. Enjoy your loaded cauliflower casserole!
Notes
- For extra flavor, you can add some garlic powder or onion powder to the mashed cauliflower mixture.
- This casserole can be made ahead of time. Assemble it and refrigerate it before baking for up to 24 hours.
