For the Meatloaf:
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 1 large egg
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
For the Loaded Potatoes:
- 4 large russet potatoes, peeled and diced
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, chopped
- Salt and pepper to taste
For the Topping:
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, mix together ground beef, ground pork, bread crumbs, Parmesan cheese, milk, egg, onion, garlic, oregano, basil, salt, and pepper until well combined.
- Press the meat mixture into the bottom of the prepared baking dish to form an even layer.
- In a large pot, bring water to a boil and cook the diced potatoes until tender, about 10-12 minutes. Drain well.
- Mash the potatoes in a bowl and mix in sour cream, heavy cream, shredded cheddar cheese, crumbled bacon, and green onions. Season with salt and pepper to taste.
- Spread the loaded potatoes evenly over the meatloaf layer in the baking dish.
- Sprinkle the top with additional shredded cheddar cheese.
- Bake for 30-35 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Garnish with chopped parsley if desired. Serve hot and enjoy!
