½ cup prepared ranch dressing, divided use

2 cups Mexican cheese blend

1 cup cooked and crumbled bacon

Instructions

Preheat the oven to 400°F (200°C).

Boil the baby gold potatoes in salted water until just tender, about 10-12 minutes. Drain and set aside.

Season the chicken cubes with salt and pepper.

In a large bowl, toss the cooked potatoes and chicken with half of the ranch dressing.
