- 1 1/2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 tablespoons sugar
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/4 cup lemon juice
- 1/4 cup lime juice
- Zest of 1 lemon and 1 lime
- 1 cup cherry pie filling
- 1/2 cup chopped pistachios
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, mix the graham cracker crumbs, melted butter, and 3 tablespoons of sugar. Press the mixture into the bottom of the prepared pan.
- In a large mixing bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
- Stir in the lemon juice, lime juice, and zest. Pour the mixture over the crust in the springform pan.
- Bake for 50-55 minutes, or until the center is almost set. Cool on a wire rack for 10 minutes, then carefully run a knife around the edge of the pan to loosen. Cool for 1 hour longer, then refrigerate for at least 4 hours or overnight.
- Before serving, spread the cherry pie filling on top of the cheesecake. Sprinkle with chopped pistachios.
