Ingredients
1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar
1/2 cup unsalted butter, melted
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1/2 cup strawberry preserves or jam
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter until combined. Press into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
- Stir in lemon zest, lemon juice, and vanilla extract until well combined.
- Pour half of the cream cheese mixture over the crust.
- Drop spoonfuls of strawberry preserves or jam over the cream cheese mixture. Swirl gently with a knife.
- Pour the remaining cream cheese mixture over the strawberry layer.
- Bake for 45-50 minutes or until the center is almost set. Cool on a wire rack for 10 minutes.
- Carefully run a knife around the edge of the pan to loosen; cool for 1 hour longer. Refrigerate overnight.
Notes
- For best results, use room temperature cream cheese to avoid lumps.
- Top with fresh strawberries or whipped cream for an extra touch.
