  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar

  • 1 cup pink dragon fruit puree

  • 2 teaspoons baking powder

For the Dragon Fruit Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup pink dragon fruit puree
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract

For the Dragon Fruit Sauce:

  • 1 cup fresh dragon fruit, diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

For Decoration:

  • Fresh dragon fruit slices
  • Edible flowers

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • Make Cake Batter: In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Mix in vanilla extract and dragon fruit puree.
  • Combine Ingredients: Gradually add the flour mixture and milk alternately, beginning and ending with the flour mixture. Mix until just combined.
  • Bake: Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool completely on wire racks.
  • Prepare Frosting: For the frosting, beat butter until smooth. Gradually add powdered sugar, dragon fruit puree, heavy cream, and vanilla extract, beating until fluffy.
  • Make Sauce: For the dragon fruit sauce, combine dragon fruit, sugar, and lemon juice in a small saucepan. Cook over medium heat, stirring occasionally, until the fruit breaks down and the sauce thickens. Allow to cool.
  • Assemble and Decorate: Frost and stack the cooled cakes with dragon fruit frosting in between layers and on the outside. Drizzle with dragon fruit sauce and garnish with fresh dragon fruit slices and edible flowers.
