For the chocolate cake:
- 2 1/2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the chocolate mousse:
- 1 cup heavy cream
- 4 oz dark chocolate, chopped
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
For the chocolate ganache:
- 8 oz dark chocolate, chopped
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add buttermilk, vegetable oil, eggs, and vanilla extract. Mix until combined. Stir in boiling water until the batter is smooth.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the chocolate mousse, melt dark chocolate in a heatproof bowl over simmering water. Let cool slightly. Whip heavy cream with sugar and vanilla extract until soft peaks form. Gently fold in the melted chocolate until well combined. Refrigerate until set.
- For the chocolate ganache, heat heavy cream in a small saucepan until just simmering. Pour over chopped dark chocolate in a heatproof bowl. Let sit for 5 minutes, then stir until smooth. Let cool slightly before using.
- Once the cakes are cooled, level the tops if needed. Place one layer of cake on a serving plate. Spread half of the chocolate mousse over the cake layer. Top with the second cake layer. Spread the remaining mousse over the top of the cake.
- Pour the chocolate ganache over the cake, spreading it evenly with a spatula.
- Refrigerate for at least 4 hours or overnight before serving to allow the flavors to meld and the ganache to set.
