This comforting, creamy casserole is a family favorite featuring tender rice, savory chicken, and a rich blend of sour cream and cheese. Perfect for weeknight dinners, it’s easy to prepare and sure to become a staple at your dinner table.


Ingredients

  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix together the rice, chicken broth, cream of chicken soup, sour cream, garlic powder, onion powder, paprika, salt, and pepper.
  • Stir in the cooked chicken and half of the shredded cheese.
  • Pour the mixture into a greased 9×13 inch baking dish.
  • Cover with foil and bake for 30 minutes.
  • Remove foil, sprinkle remaining cheese on top, and bake for an additional 15 minutes or until cheese is melted and bubbly.
  • Garnish with chopped parsley before serving.

Notes

  • You can use leftover chicken for this recipe, or rotisserie chicken works great.
  • Add a dash of hot sauce or cayenne pepper for a little heat.
  • For a crunchy topping, you can add some crushed crackers or breadcrumbs before baking.
