- 1 cup long grain white rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together the rice, chicken broth, cream of chicken soup, sour cream, garlic powder, onion powder, paprika, salt, and pepper.
- Stir in the cooked chicken and half of the shredded cheese.
- Pour the mixture into a greased 9×13 inch baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle remaining cheese on top, and bake for an additional 15 minutes or until cheese is melted and bubbly.
- Garnish with chopped parsley before serving.
Notes
- You can use leftover chicken for this recipe, or rotisserie chicken works great.
- Add a dash of hot sauce or cayenne pepper for a little heat.
- For a crunchy topping, you can add some crushed crackers or breadcrumbs before baking.
