Instructions

  2. Sauté Aromatics: Heat oil or ghee in a pan over medium heat. Add finely chopped onions and sauté until golden brown. Add minced garlic and grated ginger, cooking until fragrant to build the flavor base.
  3. Cook the Tomato Gravy: Add pureed or finely chopped tomatoes to the pan. Cook, stirring occasionally, until the mixture thickens and oil begins to separate from the tomato base, caramelizing the flavors.
  4. Add Spices: Sprinkle in cumin seeds, turmeric powder, coriander powder, garam masala, and salt. Stir well to evenly coat the tomato gravy with the spices, allowing their aroma to bloom.
  5. Combine Peas and Paneer: Gently fold in the blanched peas and paneer cubes, mixing carefully to avoid breaking the paneer. Simmer for 3-5 minutes to let all ingredients absorb the rich gravy flavors harmoniously.
  6. Finish with Cream and Coriander: Stir in fresh cream or yogurt if using, for added richness and mellow flavor. Garnish with freshly chopped coriander leaves before serving.
