Ingredients
Scale
Paneer and Vegetables
- 250g fresh paneer, cut into bite-sized cubes
- 1 cup green peas (fresh or frozen), blanched
- 2 medium tomatoes, pureed or finely chopped
- 1 medium onion, finely chopped
- 2–3 garlic cloves, minced
- 1-inch piece fresh ginger, grated
Spices and Seasonings
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Red chili powder (optional, to taste)
Other Ingredients
- 2 tbsp oil or ghee
- 2 tbsp fresh cream or yogurt (optional)
- Fresh coriander leaves, chopped for garnish
Instructions
- Prep the Paneer and Peas: Cut fresh paneer into bite-sized cubes and blanch green peas in boiling water until tender but still bright green. Drain and set aside to retain their texture and vibrant color.
- Sauté Aromatics: Heat oil or ghee in a pan over medium heat. Add finely chopped onions and sauté until golden brown. Add minced garlic and grated ginger, cooking until fragrant to build the flavor base.
- Cook the Tomato Gravy: Add pureed or finely chopped tomatoes to the pan. Cook, stirring occasionally, until the mixture thickens and oil begins to separate from the tomato base, caramelizing the flavors.
- Add Spices: Sprinkle in cumin seeds, turmeric powder, coriander powder, garam masala, and salt. Stir well to evenly coat the tomato gravy with the spices, allowing their aroma to bloom.
- Combine Peas and Paneer: Gently fold in the blanched peas and paneer cubes, mixing carefully to avoid breaking the paneer. Simmer for 3-5 minutes to let all ingredients absorb the rich gravy flavors harmoniously.
- Finish with Cream and Coriander: Stir in fresh cream or yogurt if using, for added richness and mellow flavor. Garnish with freshly chopped coriander leaves before serving.
Notes
- Use fresh or homemade paneer for the best texture and authentic taste.
- Do not overcook peas to preserve their sweetness and vibrant color.
- Cook tomatoes thoroughly for a deep, balanced flavor without sourness.
- Bloom spices properly in hot oil to release maximum aroma and flavor.
- Adjust the gravy thickness by adding a small amount of water or cream as needed.
