Description

This Mexican Casserole is a hearty and cheesy dish that’s perfect for family gatherings or a cozy weeknight dinner. With layers of seasoned ground beef, beans, and crunchy tortilla chips, it’s a crowd-pleaser that can be easily customized with your favorite toppings.


Ingredients

  • For the Casserole:
    • 1 pound lean ground beef
    • 1 can Ranch Style beans
    • 1 (10-12 ounce) bag tortilla chips, crushed (you may not need the whole bag)
    • 1 can Ro-tel tomatoes
    • 1 small onion, chopped
    • 2 cups shredded cheddar cheese, divided
    • 1 package taco seasoning
    • 1 can cream of chicken soup
    • 1/2 cup water
  • For Serving:
    • Sour cream
    • Salsa

Instructions

  • Preheat Oven: Preheat your oven to 325°F (165°C).
  • Prepare the Meat Mixture:
    • In a large skillet, brown the ground beef and drain off any excess fat.
    • Stir in the Ranch Style beans, Ro-tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water. Simmer over medium-low heat until well combined and heated through.
  • Assemble the Casserole:
    • Grease a 9×13-inch casserole dish.
    • Layer the bottom with crushed tortilla chips.
    • Spread half of the meat/bean mixture over the chips.
    • Sprinkle with half of the shredded cheddar cheese.
    • Repeat the layers with the remaining chips, meat/bean mixture, and cheddar cheese.
  • Bake: Cover with foil and bake in the preheated oven for 20-30 minutes, or until bubbly.
  • Serve: Let the casserole sit for 5-10 minutes before serving. Top with sour cream and salsa.

Notes

Feel free to customize this casserole by adding your favorite toppings like jalapeños, olives, or avocado for extra flavor.
