- 4 cups frozen corn, thawed
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the mayonnaise, sour cream, cotija cheese, cilantro, green onions, garlic, chili powder, cumin, cayenne pepper, lime juice, salt, and pepper.
- Add the thawed corn to the mixture and stir until well combined.
- Chill the dip in the refrigerator for at least 1 hour before serving.

Notes
This dip can be made ahead of time and stored in the refrigerator for up to 3 days. Adjust the spiciness by adding more cayenne pepper or chili powder to taste.
