This creamy and flavorful dip combines sweet corn, cotija cheese, and zesty spices for a perfect appetizer or side dish. Serve with tortilla chips for a fun and tasty treat!


Ingredients

  • 4 cups frozen corn, thawed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  • In a large bowl, mix together the mayonnaise, sour cream, cotija cheese, cilantro, green onions, garlic, chili powder, cumin, cayenne pepper, lime juice, salt, and pepper.
  • Add the thawed corn to the mixture and stir until well combined.
  • Chill the dip in the refrigerator for at least 1 hour before serving.
  • Serve with tortilla chips and enjoy!

Notes

This dip can be made ahead of time and stored in the refrigerator for up to 3 days. Adjust the spiciness by adding more cayenne pepper or chili powder to taste.
