- 2 cups fresh corn kernels (about 2–3 ears of corn)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- 2 eggs
- Salt and pepper, to taste
- Vegetable oil, for frying
Instructions
- In a large bowl, combine the corn kernels, flour, cornmeal, chopped cilantro, green onions, shredded cheddar cheese, cumin, paprika, cayenne pepper (if using), eggs, salt, and pepper.
- Mix all ingredients together until well combined, forming a thick batter.
- Heat vegetable oil in a large skillet over medium heat. The oil should be about 1/2-inch deep.
- Scoop spoonfuls of the corn mixture into the hot oil, flattening each fritter slightly with a spatula.
- Fry the fritters for 3-4 minutes per side, or until golden brown and crispy.
- Remove the fritters from the oil and drain on paper towels to remove excess oil.
- Serve hot and enjoy!
Notes
- For a tangy twist, drizzle with some lime juice or top with a dollop of sour cream before serving.
- You can also add crumbled queso fresco or a sprinkle of chili powder for an extra touch of flavor.
