Description

  • 2 cups fresh corn kernels (about 23 ears of corn)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 2 eggs
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions

  • In a large bowl, combine the corn kernels, flour, cornmeal, chopped cilantro, green onions, shredded cheddar cheese, cumin, paprika, cayenne pepper (if using), eggs, salt, and pepper.
  • Mix all ingredients together until well combined, forming a thick batter.
  • Heat vegetable oil in a large skillet over medium heat. The oil should be about 1/2-inch deep.
  • Scoop spoonfuls of the corn mixture into the hot oil, flattening each fritter slightly with a spatula.
  • Fry the fritters for 3-4 minutes per side, or until golden brown and crispy.
  • Remove the fritters from the oil and drain on paper towels to remove excess oil.
  • Serve hot and enjoy!

Notes

  • For a tangy twist, drizzle with some lime juice or top with a dollop of sour cream before serving.
