These crispy and flavorful Mini Zucchini Burgers are a great alternative to traditional burgers, packed with fresh zucchini and Parmesan cheese. They’re perfect for a light meal or a snack and can be served as a vegetarian option!


Ingredients

  • 2 cups grated zucchini
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  • In a large bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, garlic, egg, salt, and pepper.
  • Form the mixture into small patties.
  • Heat olive oil in a pan over medium heat.
  • Fry the zucchini patties until golden brown on each side, about 3-4 minutes per side.

Notes

  • If the mixture is too wet, add more breadcrumbs to help it hold together.
