- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 egg
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a large bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, garlic, egg, salt, and pepper.
- Form the mixture into small patties.
- Heat olive oil in a pan over medium heat.
- Fry the zucchini patties until golden brown on each side, about 3-4 minutes per side.
- Serve hot and enjoy!
Notes
- If the mixture is too wet, add more breadcrumbs to help it hold together.
- For a lighter option, you can bake the patties in the oven at 375°F for 15-20 minutes, flipping halfway through.
- These mini zucchini burgers can also be served with a dipping sauce like tzatziki or a squeeze of lemon.
