2/3 cup mayonnaise

2 1/2 lb russet potatoes, peeled and chopped (about 7 cups)
Instructions

Cook the Bacon:

In a large skillet over medium heat, cook the bacon slices until crispy. Once done, remove and drain on paper towels. Crumble the bacon and set aside.

Prepare the Potatoes:

Place the peeled and chopped russet potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender (about 15-20 minutes).

Drain the potatoes and return them to the pot.

Mix the Creamy Base:

In a bowl, mix the mayonnaise, sour cream, kosher salt, and garlic powder until smooth.

Combine the Potatoes:

Add the creamy mixture to the drained potatoes. Mash the potatoes until smooth and creamy.

Preheat your oven to 375°F (190°C). Spray a baking dish with cooking spray.
