Description

Tender chicken breasts are pan-seared and smothered in a rich, creamy basil-infused sauce loaded with melted mozzarella and Parmesan. This comforting one-skillet meal is easy enough for weeknights yet impressive enough for guests.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 1 teaspoon garlic powder

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1 teaspoon minced garlic

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup chopped fresh basil (or 12 tsp dried basil)

  • 1 teaspoon cornstarch + 1 tablespoon water (optional, for thickening)


Instructions

  • Season the chicken breasts with salt, pepper, and garlic powder.

  • In a large skillet, heat olive oil over medium heat. Add chicken and cook 6–7 minutes per side, or until golden brown and cooked through. Remove and set aside.

  • In the same skillet, add minced garlic and cook for 30 seconds until fragrant.

  • Pour in the chicken broth and heavy cream. Stir and bring to a simmer.

  • Add mozzarella and Parmesan cheeses, stirring until melted and smooth.

  • Stir in the chopped basil. If a thicker sauce is desired, mix cornstarch with water and add to the skillet. Simmer for 2–3 minutes until thickened.

  • Return chicken to the skillet and spoon sauce over the top. Let simmer for 2–3 minutes to blend flavors.

  • Serve hot with pasta, rice, or vegetables.

Notes

  • Fresh basil adds the best flavor, but dried basil works well in a pinch.

  • Use a meat thermometer to ensure the chicken reaches 165°F internally.
