These Mummy Meatball Subs are a fun and spooky twist on the classic meatball sandwich! Made with juicy homemade meatballs, marinara sauce, melted mozzarella, and “mummy eyes” made from black olives, these sandwiches are perfect for Halloween parties or any occasion where you want to add a little frightful fun to your meal. They’re sure to be a hit with kids and adults alike!

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg
  • 1 cup marinara sauce
  • 4 hoagie rolls
  • 8 slices mozzarella cheese
  • Black olives, sliced (for mummy eyes)

Instructions

  • Preheat the oven to 375°F.
  • In a large bowl, mix together the ground beef, breadcrumbs, Parmesan cheese, parsley, garlic powder, salt, pepper, and egg until well combined.
  • Shape the mixture into meatballs (about 8-10 meatballs) and place them on a baking sheet. Bake for 20 minutes, or until cooked through.
  • While the meatballs are baking, heat the marinara sauce in a pot over medium heat.
  • Cut the hoagie rolls in half, but not all the way through, creating a “boat” for the meatballs.
  • Place two meatballs on each roll, then pour marinara sauce over the top.
  • Place a slice of mozzarella cheese on each sandwich, covering the meatballs. Use black olive slices to create “mummy eyes” on top of the cheese.
  • Return the sandwiches to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy your spooky, delicious Mummy Meatball Subs!

Notes

  • You can use store-bought meatballs if you’re short on time, but homemade adds a special touch.
  • For a milder version, reduce or omit the garlic powder.
  • If you want to make these even spookier, add some “bandages” by draping strips of mozzarella cheese over the meatballs before baking.
